 Profession for WoTLK
Seems that enchanting and tailoring may not be the way to go for my Mage, seeing how shitty the perks are, and how painful both these are to level. What do you think?

Personally I say you shouldn't pick a profession simply based off perks. My guildie who was warrior was almost willing to drop his 375 profession to pick up Skinning for some extra crit. The perks are meant to be a little boost, but not game changing. I'd say stick with what you've got, unless you're very unsatisfied with the output.

Leveling enchanting is a pain in the ass, so is tailoring, and I don't see myself wasting literally 2000+g just to get 30 spell damage or so.

personally, i like engineering because of the bombs and stuff. i like the arcane bombs unfortunately, they are expensive to make but since your a mage you still have like counterspell and stuff so you might not have to use them often, thus making it more inexpensive...

So far enchanting in the xpac has been easy to level. I have yet to replace one item so everything I have gained questing/drop wise has been DE'd. I could be alot higher in my enchanting level but Im taking advantage of the AH at the moment. I like the fact I can enchant my rings for spell power its a nice little boost.
Im am also an alchemist. Mixology is a good "perk" 4hr flask's are killer for questing all day.

I just went for oldschool tailoring/ench. Surprisingly, tailoring has been easy for now. As for ench, soul dust goes for 2g per unit, which is simply insane for level 21-30 items. Anyways.

I'd say it depends on your class.
Much (most) of the crafted stuff now, including the epics, are BoE, as blizz wanted to limit the amount of poeple speccing into a certain profession just for 1 must-have item *cough*stormherald*cough* that was vastly superior to all the other alternatives at the time.
That said, I almost always go engineering because you get so much utility out of it in world pvp (as well as decent raid pluses, like a chance of rezzing someone via cables, or repair bots).
As a rogue/mage/hunter able to 'survive' a wipe, engineering is always a hot choice for that rez chance to 'save' the group.
I also went enchanting, mainly because I love to do oldschool instances and that stuff accumulates fast.

You also can't forget the Figurine-Shadowsong Panther. Many pvp rogues, including myself dropped other professions just so we could have that stealth boost and superior AP bonus to the Bloodlust Brooch.
